Hi,

 

I understand beef used for mincing should be minced within 15 days of kill date. But, if the use by on the original product is 30 days from kill (for example) and we mince on day 12 from kill date, do we have a 3 day shelf life or can we extend as long as we don't exceed the original product use by date?

You should still have 18 days of shelf-life once minced. I would look into scientific research about minced meats and look into in-house shelf-life studies and bacterial studies as well. Again there may be enough solid literature that you can reference the study for compliance purposes.
