11.10.1 in SQF 8.0 states path and roadways are to be sealed.  What about if your parking lot is gravel?  What if the smoking area is located in the parking lot?  Why would the path from the smoking area be sealed but not the parking lot.  We do have a cement front entrance in front of the building once you leave the parking lot.

You will need to conduct a risk assessment to determine your actual risk.  For one thing, listeria is found in soil / dirt so gravel over soil / dirt is not the best thing for parking lots and pathways into the facility.

 

It is good the pathway to the smoking area is seal, if the smoking area is sealed or cement.  People likely take multiple smoke breaks during their shift and may only come and go from the parking lot once, or twice during their shift.

 

You will need to show how you prevent anything from the gravel and soil parking lot and pathways from coming into your facility include materials, chemical hazards (pesticides, weed control chemicals?), and biological hazards (pathogens such as listeria).

The idea is that stuff is not being tracked from the outside to the inside of the facility.

 

These of late have been accepted by SQF conducting audits at your SQF client facilties...

 

Cheese company - hard impacted soil (accepted based on having a qualifying risk assessment and lab analysis)

"pea" sized stone walkway from pea sized stone parking lot - (again with risk assessment and lab analysis)

Sealed asphalt parking area and concrete padded walkway leading to entrances

 

Not accepted and marked off - 

Grass and dirt pathway leading to employee entrance.

Bead board thrown on top of mud 

 

Generally if maintained and you have a solid risk assessment you should be OK.
