Allergens relevant list for food safety hazards in a slaughterhouse

Hi,

I need to make an allergens list that is relevant for the food safety hazard. In the slaughterhouse we don't use any other ingredient than raw poultry meat . In the poultry farm the allergens can be found in the feed and medicines. Can the feed and the medicines  be considered allergens for the final product?  Thank you!

Can you inform the detailed composition of the final product / derivation ? The latter presumably defines the allergenic characteristics.

 

Is a particular Standard involved ?

Hi Charles,

the final product that we obtain in the slaughterhouse is raw poultry meat. The external auditor suggested me that I have to do a allergen list for the ISO 22000:2018 standard. In the slaughterhouse we don't have any allergen so they suggest me to look in our poultry farm at the animal feed or medicines. Is necessary to do an allergen list for the things that are used in the farm?

NO!!!!

 

poultry are not fed allergens and withdrawal periods prior to slaughter ensure that medications are metabolized prior to the birds being sent to the slaughter house

 

There-risk assessment complete 

 

(10yrs slaughter experience talking)


Please stop referring to me as Sir/sirs
