Hi, water risk assessment help needed..... I am a  washed potato, peeling potatoes and veg prep operation and I need a water risk assessment. Is there anybody out there that could help. Thx

processing water?  or generally speaking incoming water?

Assuming you have a municipal water supply, twice per year, sample the water at the main coming into the facility and 2-3 random test spots within the facility rotating through all handsinks and water feed for your process

 

As for processing water--you'll want to test it monthly to demonstrate that recirculated water has not become a source of contamination (assuming you treat the processing water to keep pathogens and general filth from proliferating)

 

Storage tank?  You have a tank full of water waiting to be used?

Storage of water can be tricky business

How long do you store it

How often is the storage tank cleaned

is there backflow preventers on it

is that water treated before use

what is the microbial activity of that water as compared to the water that is not stored

 

 

answer all those questions, and they should determine the level of risk

Attached is an RA I use. I completed it for municipal supply, non-storage. This would change for storage, or well water.

We have completed a risk assessment very similar to what "Slab" provided.  We use water for cleaning incoming raw material, in process and for cleaning.  All water comes from the city.  We will ask each year for a city water analysis, we also conduct a full water test at the plant each year and then we conduct monthly water tests in three locations for total coliforms and e-coli. Never an issue with any inspections.
