What , if any, are the requirements of relabeling product.

Example:  we label our product and notice there is a spelling error on the label.  Do we have to peel the old label, or can a new label be placed over the top?

I'm not talking about changing production dates or best by dates.

At my former job, our policy state labels with mistakes were destroyed.  But sometimes our customers requested their product be relabeled without removing the old label.  I'm still searching through our label policy.

Hi Miss Frankie,

I don't know about US but any visible "tampering" with labels such as yr line 2 can be a (Regulatory) rejection issue in EC. For fairly obvious potential reasons IMO.

And can include pre-printed information.

Kind Regards,

I would research the FDA and USDA labeling guidelines.  Also, try reaching out to a label courier (they do exist, mainly for USDA products) as they can be an invaluable source on labeling regulations.
