Hi all,

 

We are thinking to develop a new product which will contain mushrooms.

Our facility has a low risk and high care area. The new product will be sold as RTC but we can only assembly it in High Care. 

We will buy sliced fresh mushrooms for this product and our challenge is how to introduce the sliced mushrooms into High Care. We have considered our current process (chlorinated wash) but this has been discarded due to the potential shelf life reduction of mushrooms.

 

Has anyone got any suggestion?

Take a look at this patent I've found:

It begins with a chlorine wash, but follows that up with the use of sulfur dioxide to neutralize the chlorine and whiten the mushroom. Read through the process if you like, perhaps its something your facility could test.
