Hello dears,

 

 

Does anybody have any scientific references that why is virgin coconut oil stored below 25oC changes 

its color to pinkinsh or brownish within its shelf life period?

Hi!

 

From what I gather ''virgin'' coconut oil can turn pink duo to oxidation of it's natural antioxidants (polyphenol oxidation).
In refined coconut oils these anti oxidants are usually not present anymore, hence less pink hue.
