Good Morning Everyone ,

Anyone could share any HACCP Template ? I just started in a Company that make tortillas and trying to work in the HACCP plan ..

Hi IzahelCamps,

 

Attached is a HACCP template I've used before, one thing I would say is missing from it is a call-out to create a flowchart of your process first. A flow chart will help immensely with your hazard analysis.

 

Additional tabs could be added as needed to consolidate the information, but perhaps this could get your started.

since you are in the USA, do you not need a preventive control plan?   Or are you a qualified facility? (small business exemption)

I think that we need to have also the preventive plan , like i mentioned , i just started , is a small company that is looking for a SQF certification .

So I think the best way starting identifying the critical process  development my plan HACCP to eliminate or controlled the risks in our process.

I understand.  HACCP is a great place to start.   The Preventive Control plan is a legal requirement.   If you are small enough, you can file for the small business exemption.   That will give you some grace with the FDA regarding the PC plan and other requirements.

I deduce you have limited technical background in HACCP ?. And Science ??

If so, IMO, the best initial option is to avail yourself of some Training opportunities.

I'm not in USA but I believe if you are directly involved with FDA Preventive Plans, some PCQI qualifications may be necessary.

You are correct, Charles. The FDA states that a PCQI must develop the preventive control plan. Their definition is that a PCQI is someone who either has had a training course to certify them, or is otherwise qualified through job experience. If the OP has no one at their disposal with adequate job experience to be considered a PCQI, they would need to seek out certification before their HACCP plan would be considered valid.
