Hi,

I am performing raw ingredient hazard analysis for HACCP plan. We do purchase popcorn. Our supplier is small company when I did request documents I did not receive it and we do business with them from long time.( I am new employee at this company and as per other employee we never received any documents from this supplier in past) Looks like we not going to change supplier. In that case what are we do for analysis. Mycotoxin is risk for popcorn.

So, you've got nothing on file from that company? You can send them a supplier questionnaire with the questions you want to be answered, including hazard analysis. If they don't provide COAs for their product, you may send them for testing as well.

go and conduct an audit or have a 3rd party auditor do it.

For a processed product like popcorn, I would absolutely expect a CoA. Perhaps start with pressing them for this specific document. If they don't product CoAs, it may lead to the discovery that they don't test their product! As others have suggested, a supplier questionnaire is an essential tool in the vetting process. For a longstanding supplier like these popcorn producers, a questionnaire should definitely be on file.

 

In-person audits of the facility are perhaps the best tool for understanding where your supply is coming from though...But make sure an experienced individual is performing the audit. You'll only have so much time to ask the right questions and tour the plant.

Appendix 1 of FSMA can give you all the potential hazards of popcorn. Then determine if you will control the hazards or your supplier. So testing, etc.
