My name is Regina Asante, and I am a lecturer in Food and Postharvest Technology at Koforidua Technical University in Ghana. My research focuses on food safety, particularly microbial contamination of fresh produce, with an emphasis on molecular detection techniques and food safety practices among farmers.

I have been working on studies involving bacterial and fungal contamination in farm-fresh salad vegetables, combining laboratory-based molecular analysis with field-level assessments of knowledge, attitudes, and practices.

I am passionate about improving food safety systems in developing countries and am especially interested in collaborative research, capacity building, and knowledge exchange in areas such as fresh produce safety, foodborne pathogens, and public health.

I look forward to connecting with researchers and professionals interested in collaboration, joint publications, and training opportunities.

Thank you for the warm welcome 

 

I’m currently working on research focused on food safety in salad vegetables, particularly in Ghana. My work explores microbial contamination using molecular techniques such as PCR and sequencing, alongside assessing farmers’ knowledge, attitudes, and practices related to food safety.

 

Some of my findings highlight a high prevalence of both bacterial and fungal contaminants in farm-fresh vegetables, as well as gaps between farmers’ awareness and actual implementation of safe practices. I’m especially interested in how these risks can be reduced through improved handling, training, and policy support.

I’d be happy to share more details and also learn from others in the forum.
