Digital Transformation in Food Safety: Smart Data, AI and Connected Inspection Systems

Took place:
Friday, July 10, 2026 - 03:00 PM UK, 10.00 AM EST

Presenter:
Rob Rogers, Product Inspection Expert, Mettler Toledo

Webinar Overview:
Artificial intelligence (AI) is rapidly changing food safety by helping manufacturers analyze data faster, identify risks earlier, and make smarter decisions across operations. It is being used in areas such as inspection, traceability, predictive maintenance, and quality control to improve both safety and efficiency. While AI offers significant benefits, it also brings challenges such as data reliability, cybersecurity, and the need for human oversight to provide trustworthy results. This presentation will introduce emerging AI tools from Mettler-Toledo and show how they can help advance food safety and performance in a more connected, intelligent wa

Ok, do any of us that use the forums actually use AI for any of this?

Ok, do any of us that use the forums actually use AI for any of this?

There were interesting panel discussions about this at SQF Unites. One of the big takeaways is that yes it will be used, but it requires people with experience to verify that accuracy. The rule of thumb is that "if an auditor can't tell if an SOP is AI or not, then you are using the tool correctly."

One of the things that I'm likely to use it (we get the official go-ahead next month) for is to rewrite our calibration policy. Our site makes lots of things that aren't food. And wanting to integrate requirements from food, medical, aerospace, and Iso 9001 into a single calibration policy. I plan to use AI iteratively to arrive at a policy that satisfies our myriad of external standards.

Interesting..

We should start an 'AI best uses and practices in food safety' thread. I think a lot of us just have no idea how we can use it successfully. I'd love to get some real plant success stories.

Newer member here, just wandered over from the intro forum — this is exactly the kind of thread I was hoping to find.

I'm coming at it from the opposite side (my background's software, not food safety), and the thing that jumped out was LostInTheWoods' point about needing someone experienced to verify the output. That tracks with what I've seen: these tools are good at producing something that looks right, so the real value is the person who knows enough to catch when it's confidently wrong. TimG's "real success stories" thread would be a great read too — I know the tech side but not how it holds up on an actual plant floor, so very much in learning mode here.

Syed Farhat Raza : Keeping in mind the risks you have mentioned associated to AI, what are the key ways to mitigate these risks?   Is it possible to compare the internal data analysis through AI Vs with industrial standards in a specific business such as dairy, fruits drinks etc;
Konrad Wojcik : You mentioned that there may be a time where metal detection tests will be done without human intervention. How will this be achieved and how can it be audited?

Lee Gobin : does the ProdX work with other companies' software seeing that this is Mettler Toledo's proprietary software?
Konrad Wojcik : You mentioned that there may be a time where metal detection tests will be done without human intervention. How will this be achieved and how can it be audited?
George Karingithi : "With EU Regulation 2024/2895 on Listeria now in live enforcement from 1 July 2026, and AI-powered environmental monitoring becoming more accessible, do you see a realistic path where AI-generated trend data from inspection systems could be used to satisfy or supplement traditional EM sampling requirements? Or does the regulatory burden on data integrity and auditability actually slow that adoption in food manufacturing
Iffat Batool : Hello iffat batool from Germany
Natasha Botinova : Is  there data how many mistakes AI has done and how severe is impact in the industry?
Kevin Freebern : How do you use older equipment that could be adapted to the AI software or would this be an manual adaptation in the process?
Darla Carlisle : With the advent of AI, do you have any recommendations on how to take advantage of it while still complying with FDA requirements around verifiable signatures?
Javier Diaz Diaz : Good morning from California
Marvi Cilli : In a "past life", I had to validate an automatic set of results to the strictly manual original method. Do you foresee this being the case with AI systems?
Muhammad Ans : Hi 👋, Muhammad Ans from Pakistan
Onoriode Eruteya : What are the main convincing inconsistency of AI-driven food process and how can they be mitigated?
Sonia Sinha : a lack of digital literacy among older workforces and reliance on incomplete, low-quality data can derail AI and automation initiatives. how can they be trained to work with AI?
Rehman Fateh Tariq : Pakistan zindabad Ans Bhai
Samra Nisar Chishti : hii  I am Samra Nisar Chishti
Samra Nisar Chishti : FROM PAKISTAN
Heng Kuang Lee : lee from malaysia
Chris Billings : You guys keep asking about how to mitigate incorrectness in AI. It's up to you to not get lazy and traing it with your systems. I argue with AI all the time 30 years of SME in food safety I am able to challenge it. Keep challenging it.
Chris Billings : Still straight program language prompt, response.
Gillian Epule : I am wondering how the food industry can leverage AI technologies to curb food and water toxicity  issues from plastics overuse and other emerging health concerns such as food fraud, contaminant in the food industry.
Dr.Bache Gowda R : Apart from CHat GPT,how about Perflexicity,LM Book  etc Applications please
shikha deka : How should artificial intelligence (AI) be audited, considering that many AI systems continuously evolve or are regularly updated? As AI becomes more integrated into business processes, how frequently should organisations conduct internal audits without creating an excessive burden on management time and operational resources?
MUHAMMAD Asad TUFAIL : Halo sir guide for multinational industry interview in Food saftey
Rosa Alcantara : Hello from Venezuela
