As we all know, the salmon products are very popular in EU countries, you can find the frozen salmon products (like chum salmon, pink salmon) in any retailer stores. the meat color is very important to evaluate the salmon quality level, so we have the Roche color card (old system seems still use in EU, meat color level from 11 to 18) and the Roche salmofan card( widely used in USA,meat color level from 20 to34) to check the salmon meat color visually, do you know what is the relation between the two color systems in your country, and how the quality people check the salmon color in your country? thanks to discuss.

Hello Robin, thanks for telling us some interesting facts about salmon, I never Knew them. It will be a long shot if you find somebody in the forums who is an expert in this field; although you never know.

Any salmon experts out there?

Regards,
Simon

Dear Simon,

If it’s of any interest, the colour of farmed salmon (now large production) is “assisted” somewhat. ( eg http://www.cbc.ca/co...mon/colour.html ).

Not an expert but some European / Scandinavian countries are also using the ‘fan’ these days however I don’t know about relative popularity. Automated systems are also in development.

In page 10 of the specific pdf file there is an article

"Relationship between Colour Readings with the Roche Colour Card and the Roche SalmoFanTM"

I think that it would be very helpfull!!
