CONTROL METHODS

JUSTIFICATIONS

DOC

RESP

Surviving contamination of the food contact surfaces because the area had been cleaned by an untrained person

3

6

All personnel are to be trained in the use of chemicals and cleaning of specific food production areas

Trained personnel are less likely to make errors with dilution of chemicals within the production areas and therefore residues of undiluted chemicals are less likely to survive on the machinery

GMP Audit

JIS

Metal contamination of the ingredient or product from snap off blades or similar item

2

3

6

Snap off blades are not used within the factory production or storage areas

By not allowing such an item on site, the risk of product or ingredient contamination is greatly reduced

GMP Audit

JIS

Metal contamination of the ingredient or product with staples

2

3

6

Staples are not allowed on the production floor

By not allowing such an item on site, the risk of product or ingredient contamination is greatly reduced

GMP Audit

JIS

Contamination of ingredient or product with production or non-production tools or equipment

Controlled permit for tools to be taken onto the factory floor, includes scissors, metal detector test pieces and spanners etc.

By not allowing such items uncontrolled on the factory floor, the risk of product or ingredient contamination is greatly reduced

GMP Audit

JIS

Contamination of product or ingredient with wood

Wooden pallets are not allowed beyond the de-box room, the line of the drain in the corridor being the limit

By not allowing wooden pallets beyond the drain line in the factory area, the risk of contaminating the product is significantly reduced.

GMP Audit

JIS

Contamination of the ingredient or product with unknown foreign bodies

2

3

6

Controlled use of new food grade pails for some products

Pails to be removed on a just-in-time basis reducing the potential for contamination

GMP Audit

JIS

Contamination of the ingredient with unknown foreign bodies

2

6

Sieving and inspection and maintenance of the sieve to assure of its integrity

Sieves inspected regularly for being intact will be effective in removal of some foreign body contaminants, poorly maintained sieves are not effective in such a manner

I hope this will be useful to you

Oh p*o, I lost the table. I hope you can make sense of the information now. The table is 8 columns across, if you can copy this and put it into a table 8 columns across ensuring the numbers always fall under "likelihood, severity and risk" then the risk assessment will make sense.

Give it a go, ps this is not complete for that section.
