I am carrying out work for a frozen food company in preparation for their BRC audit to issue 6 of the Global Standard. Clause 5.1.4 of the standard states 'Where shelf life trials prior to production are impractical, for instance for long life products, a documented science based justification for the assigned shelf life shall be produced'. The company assignes a 12 month shelf life to all of their frozen products, which include meals and pastry products. I would be grateful if anyone could help with any information regarding a scientific justification for this shelf life.

Kind Regards
Skye

Dear Skye,

Try this current thread maybe?

http://www.ifsqn.com...dpost__p__54528

There are a lot of other threads here on similar queries. Most of the methods fall into 2-4 basic categories as discussed in the threads. Unfortunately, a lot of the technical background details, eg Arrhenius plots, are given in book publications although some guidance documents are attached in the threads, as per the above link.

Kind Regards,

Skye the following paper can be found online in pdf very easily and contains very good information on multiple methods for shelf life prediction of frozen foods. You may find it helpful.

the paper is titled; Shelf Life testing: Procedures and Prediction Methods for Frozen Foods, Bin Fu, Kellogg's Battle Creek MI, Theodore P. Labuza, Department of Food Science and Nutrition, University of Minnesota, 1334 Eckles Ave., St. Paul, MN 55108.

There is quite a bit of information on mathmatical models and test methodology that might be useful for your needs.

Hope this helps,

Rich
