Here are a few sites to help get you started.

http://www.fsis.usda...curityGuide.pdf and

https://www.aibonlin...tyguidancel.pdf

Its commomnly referred to as Food Defense, but the overall system is typically the same. This should be a team approach and your plan should cover at minimum;

Management of food security
Security of the physical facility
Security measures for the employee's
Security measures for materials receiving
Security measures on finished products

Thank you,
This is definitely a start.
Do you have your own guidelines in your company or do you use also the AIB or FSIS guidelines ?

Thanks in advance,

Steffen

Steffen,
I would agree with jpredmore...both FSIS and AIB will give you plenty of information. I have used the FSIS assessment the last 3 years. It's a thorough assessment of your facility and current security measures, easy to understand.
Remember that any question you answer "no" to will require a written explanation as to what you are doing to comply or a reasons you will not be complying it ( risk assessment).
AIB also has webinars that you should be able to access.
Best of luck.
