Hi,

I am running gluten-free bread loaves in a facility containing gluten. I like to know which sampling method can be used to verify that the lot is gluten-free?

We Do equipment swabbing for allergens at the beginning of the shift and then we sample the product. We also test each ingredient to make  sure all of them are Gluten Free. That gives us the assurance that the product is Gluten Free. There are several types of Rapid testing methods out there. We user Neogen swabs for the product contact surfaces and ROMER LABS have one good for Product. Or either send it to a 3rd party lab for Testing.
