When I started really working with food safety standards at my last job I was actually surprised they didn't do unannounced inspections like our rabbi did.

 

I know that it makes it difficult on the plant if the inspector comes when some of the senior management is on vacation, for example, but that's why your supposed to have backups / shared (institutional) knowledge.

Dear All,

 

Perhaps it's worth mentioning that according to previous posts here, i seem to recall that the  BRC audit system does offer a partial/rational  solution to the absence of  "key" personnel (not every company has large pockets [or committment?]).

 

Maybe a useful Promotional Gesture the way things seem to be going ?

I completely understand the concept of surprise audits but I cannot imagine how it will work for my business.  We do fresh fish processing and some days we just don't process.  The auditor could show up and it's just me here.  Even if they gave us 24 hours notice I could at least have some staff on hand.  Hopefully they get the kinks worked out before time for my audit.  :)
