Salam and hello,

 

I would like to ask about sterilization method in drinking water in relation to it being CCP in HACCP system.

 

From what I understand uv-light and ozonation are both sterilization method in drinking water, and a manufacturer can choose either one. However, if a manufacturer have both uv and ozonation in the water treatment system, which one shall be CCP? Can both be CCP if according to decision tree? or ozonation as CCP since it comes after uv?

 

In terms of validation, the manufacturer need to validate both method or the one identified as CCP?

 

Also, would having a uv & ozone together is better than having either one?

Hi Nuraini,

 

Different haccp philosophies may give different but equally acceptable answers.

 

Personally I don’t use D-Trees.

It’s a question of risk assessment, effectiveness of control measures,  and possibly   “custom”.

 

I assume UV step is applied prior to ozonation step

 

three questions –

 

(1) What is the specific hazard which has been assessed as significant ?

(2) Are both UV or ozonation as applied in yr Process capable of  independently eliminating the hazard in No.1 ?

(3) Are both UV and ozonation as applied in yr process together capable of eliminating the hazard in No.1 ?

 

If answer to No.2 is Yes, it is customary to denote the 2nd stage as CCP, ie ozonation step in above layout.

If answer to No.2 is No and answer to No.3 is Yes, combination (ozonation + UV) steps is categorized as a CCP.

If answer to both Nos. 2 and 3 is No, you require another control measure (CM) or combination of CMs for a CCP.

 

Traditional Haccp typically requires you to validate the capability of the "CM" /critical limits which relate to the control of the designated hazard/CCP
