Total Coliform High in ICE

Hi ,

 

Total coliform tested positive for the Ice that we use for transportation of Raw Shrimp. We are a Shrimp processing factory .

 

The final product , frozen raw shrimp did not ever show positive.......we check each batch.

 

What I request help with is,  To understand if coliform in ice used during transportation is a significant risk to the finished product. The finished product goes through an IQF machine and sold as frozen shrimp.

 

We use flake ice during processing that tested negative.

 

Also , E-Coli is negative for transport Ice , flake ice and finished product. So it's only coliform.

 

We wash the shrimps several times during processing. Does only transport ice being positive poses a significant risk? If yes , Why is it negative in finished product then.

Some more info. might help, eg -

 

is this farmed shrimp ?

 

is the process whole shrimp to raw frozen iqf shrimp meat ?

 

IMEX coliform results for raw shrimp meat are rarely negative all the time. But it may depend on yr Procedure for coliform (see below) or the raw material. Do you ever test coliform levels on the incoming raw material ?

 

what is the "transportation" step you refer to ? Is it stages prior to receiving fresh raw whole shrimp for processing ? if so, where does the ice used come from ?

 

Is the coliform/E.coli measured in-house ?

 

what is the procedure for Coliforms / E.coli ?

 

do you have quantitative data for coliform ? Plus or minus results are not really sufficient to make predictions.

 

do you use chlorinated water to produce yr flake ice ? How about the "transportation" ice ?

 

Coliform is not a specific safety-related measurement (it covers a group of bacterial species).

Normally IMEX coliform values for ice will be negative if using chlorinated water. The flora on ice reflects the quality of the water plus any  production/post-production contamination.

 

As you can see, a lot of factors may be involved. :smile:
