Hello everyone, we are a new bread company and wanted to be certified by iso 22000 and brc we are currently documenting all the requirements with the help of a consultant he only gives us policies and procedures. Do we still need to make a fsms manual and work instructions? Thank you.

Dear Urag,

Yes, you need a fsms manual and work instructions. As well as registration forms and test plans. All this must have been adapted to your company.

After all has been implemented, the quality system needs to work. So reading your post, there is still a lot of work to be done.

Good luck!

Kind regards,

Gerard Heerkens

In addition to Gerard's comments, I believe auditors will look first or ask for your FSMS Manual and Work Instructions. They will try to check whether you have a documented system for all the requirements of ISO 22000 (or whatever standard you will use). And then from those documented systems and procedures they will check whether what is written is consistent with what is being done or what is being materialized in your plant.

So in short making the FSMS Manual and WIs are important.

Hi Urag,

One typical approach as initially, I think, introduced for ISO9000 series is to produce an iso22000 "Quality Manual" (a slight misnomer in the context of FS but now traditional).

This iso manual is basically a Policy (=upper tier iso triangle) Manual "covering" the requirements of the iso22000 Standard but also including a list/pointers of/to so-called Quality Procedures (= middle tier iso triangle structure).

The Quality Procedures then typically include links to related Work Instructions (= Lower iso tier) / Forms / Records as required.

Two examples of Quality Manuals are attached below. First uses a basic (generic) style, second is further detailed/elaborated for a specific application. You can compare the formats/contents.

Attached File  ISO22000 - Food Safety Management System - Quality Manual.pdf   300.83KB   276 downloads

Attached File  ISO 22000 FSMS Quality Manual (2).pdf   788.11KB   288 downloads

Kind Regards,

Hi Urag,

FSMS manual and Quality Manual are just the same. FSMS manual is the term used in ISO 22000:2005 standard requirements. As for ISO 9001, Quality manual is the term they use.

I hope this info may help.

You've said that you alone is documenting you're system. Well to tell you, I also experience that on my first job. You can do it. Good luck on your certification
