How do you document intentional adulteration mitigation strategies in your facility? FDA’s Food Safety Modernization Act now requires that food facilities plan for intentional adulteration in a documented food defense plan. Although the requirements are similar to a food safety plan, there are distinct differences. Combining the food defense and food safety plans may create an opportunity to miss key elements in both. Learn the pitfalls of accounting for intentional adulteration in your facility’s food safety plan. We will discuss and compare industry best practices with regulatory requirements and make suggestions on how to prevent developed mitigation strategies from being compromised.

Ernest Daigle : We are having difficulty creating a food fraud vulnerability assessment. Searching for incidents of food fraud related to the ingredients we use is difficult.

Ernest Daigle : Food defense also involves protecting your assets (equipment, buildings, etc.) and your brand name as well as the food itself from intentional damage.

Denis Belanger : In our organisation, we defined Food Fraud as an issue initiated by management or plant owner for an economic gain. If an employe or visitor tampers product for his gain - thats food defence.

S G : Ingredients or preservative used in the product and what it shows on the label, if that differs then is it a food fraud?

Ernest Daigle : Food Safety Plan Builder and Food Defense Plan Builder software the same thing?

Lauri Glasgow : In another webinar I attended, it was mentioned that the current Food Defense Plan Builder did not meet the requirements required for a Food Defense Plan under FSMA.
Shayra Martinez : There are two different builders, Food Defense Plan Builder and Food Safety Plan builder, for Food Defense you will use the Food Defense Plan Builder.

S G : In Audits sometime the auditors are aware of the possible hazards in the facility, even though the company is SFSF, HACCP certifired. I'm just wondering that why auditors neglect this hazards and on what basis do they pass the audits?

Ernest Daigle : Stacey, write 2 plans. One without all of your specific internal vulnerabilites for customers and a more detailed document for your internal use.
