Hi everyone,we are using separators/dividers in our RTE Packaging Room to prevent cross contamination (different allergens, and separate the washing area and finished products). What environmental monitoring do you think we can do to measure the effectiveness of those separators? Please share your opinions. Thanks.

To measure effectiveness of separators you may do allergen swabbing for different allergens (e.g. in Milk area swab for Soy, in Wheat area swab for Milk, etc.), and of course you could do swabbing for micro, but that would be more for effectiveness of sanitation...
