Hi,

 

How you choose to asses emergency suppliers is up to you and the risks involved with your product.
The risk involved with buying raw milk for your raw milk cheese processing plant is a lot higher than buying salt from a different supplier.
Besides food safety risks there are also food fraud risks. Some products may be more easily adulterated. 

I would advise to look at your risk analyses for all ingredients you are buying and how you are using them in your process. If you are eliminating risks in your own proces than you could perhaps be more lenient.

Which ingredients are easily switched without concern for food safety or food fraud? Make a short list of demands for these products (e.g. product specification and written statement concerning food safety).

Which ingredients are difficult to switch wihout losing confidence in your food safety and food fraud status? Decide for yourself which steps you should minimally take to ensure all minimal requirements are met (e.g. product specification, GFSI certificate, other certifications etc.).
