Hi all! Good day. We are a chocolate manufacturing company. Recently, we encountered one complaint whereby our customer highlighted that one of our assorted based chocolates has some quality defects whereby the white chocolates contain holes. Customer complained only one unit with this defect. During our process, we did not encountered such issue. Also, this is our first time ever receiving this kind of complaint. Is there any chocolate manufacturers who able to guide us on this issue? We have tried our best to investigate on this issue, however, we could not find the root cause. Thank you.

That looks like the vibration table (if you use one) wasn't working properly.   Those just look like air bubbles created during tempering (if it's too aggressive) and/or the cooling step was rushed, not allowing the air to escape slowly

Could also be that the white chocolate was too thin and caused the walls to cave in.

I work at a chocolate factory as well and that was the problem with our Easter eggs.
