Hi all.

Does anyone have a suggested tabular format to present HACCP Prerequisites? We've been asked to present our PRP in a tabular format akin to a CCP summary table. It seems pretty intuitive, but is there a standard format that will be familiar to BRC auditors?

Dear ISO170125,

Not exactly sure what type of items you wish to tabulate. Most auditors are aware that the majority of prerequites are GMP/hygiene oriented and numerous single column lists of these exist (with geographical variations although I suppose BRC are primarily interested in Codex.). Presume (?) you are not referring to such a typical checklist / GAP list of the (hv/hv not) variety (eg, a simple example here - http://www.fda.gov/F...P/ucm121129.htm )

From a HACCP perspective, a typical pre-requisite might be detailed by (a) the particular step/program/whatever, (b) the methodology for its control and monitoring, © asssociated corrective action, (d) record keeping, (e) validation and verification procedures. For an example of above (but not in tabulated form) see the file below -

Is this the kind of thing you mean ? If so, no doubt other people here hv seen a tabulated type equivalent ?

The above file is (obviously) a restricted scope collection. Further possibilities for process related prerequisites can be rather wide depending on yr exact situation, for example see this link –

Only problem is $$$. :smile:

Similarly IFST but they do release some of their reports into sourceable locations.

Codex Alimentarius, “General Principles of Food Hygiene”, CAC/RCP 1-1969, Rev. 4 (2003)

The Dutch HACCP has include this codex in a tabular form. It is quite common for companies certified against this scheme to use this tabel and add one or more columns. In wich for example is documented, if the requirement is relevant for the organisation, how it is implemented, document reference (procedure, instruction), who is responsible, etc.

I only have Dutch version in word of excel. In the following you will find the Dutch HACCP-standard (English version). From page 34 you will find the prerequisite list.

Our BRC Food Safety and Quality Management System - Food Manufacturers Edition
contains a summary of relevant prerequisite procedures.
