Perhaps the inhibition properties and /or required level of abv necessary for food safety in alcoholic beverages.
I have looked extensively for the answer and asked others at what level (in % abv) does an alcoholic beverages base need to be before the abv can be used as a CCP on your product in your HACCP plan. Is 10%, 12%, >14% the right abv for food safety? Test it against Listeria, Salmonella, Staph and other pathogens.
There doesn't appear to be an answer.

Raffay, there is growing concern in the recycled paper and paperboard industry about microbial and chemical migration of contaminants in recycled paper used for food packaging. perhaps this would intersest you.

hello tamale
what you said is really important and required research to be done. but problem is that research on particular topic and direction has its own requirement , so i have to consider what i can do in present conditions of my university . well tamale i am thinking over the utilization of nicin for making food safer w.r.t microorganisms and their toxin so if you have any information about that kindly share it with me.
