Can anyone please share a checklist for auditing a CCP or provide a list of questions / things to look for.

Dear Simon:

I do not have the checklist but I always train my people to use the 5W+1H method:

What – e.g. what is your CCP? What do you monitor? What is monitoring record you have etc?

Why – e.g. why do you choose this as CCP? [Indirectly asking the auditee how he use the decision tree, severity/likelihood matrix etc]

When – e.g. when do you carry out monitoring of this CCP etc?

Who – e.g. who is monitoring this CCP etc?

Where – e.g. where do you monitor etc?



How – e.g. how do you monitor this CCP etc?

You can actually generate more questions during the auditing process.

Dear Simon,

what is important to my mind would be "Is this critical step is well managed ?".

Here are some ideas of what I would check during an audit :

- how has been this CCP caracterized (decision tree and risk analysis) ? Has it been validated (How ?) ? How the monitoring equipments are controlled (temperature probe i.e.) ?

- how is it monitored ? I mean, what are the records ? what is the frequency of the check ? who is doing the monitoring ? who is checking the monitoring ? who is validating the CCP ? Is the staff trained for the monitoring, the check or the validation ? How is assure the tracability of this control ?

- what are the consequences in case of failure ? Is the product released anyway ? Is it rework (How and how is it monitored and validated as conform ?)? is it thrown to the bin ?

Many questions could be add according the CCP and the risk. The most important thing is the audit should assess the CCP is well managed in any circomptances.

Hi Simon,

It appears to me that the typical auditing requirements will be those associated with Validation and Verification in their various incarnations as listed in HACCP treatises (eg the Codex 2003 masterpiece).
And especially the validation of the critical limits which is often the nuisance bit :smile: .

I think this is a really good checklist!  What I find helpful, though, for lists like this, is to add another column with the requirements per the HACCP plan. That way, you know what is supposed to be happening according to the plant procedure.

Dear All,

 

It is remarkable IMO that none of the posts, or the checklist, seems to contain the word "hazard". ?

 

But at least the checklist mentions "control". :smile:

 

Then again, the thread was initiated in "ye olden days" of 2012. (0005AIP)
