Do production lines/ machinery have to be tracked to validate that the cleaning was conducted as scheduled, and how are machines suppose to be scheduled to facilitate with tracking? Who does the sheduling and who is desingated to control and hold the records?

Assuming you mean heavy machinery, the cleaning frequency should be listed in the manual for the equipment. Incorporate these frequencies into your in-house master cleaning schedule. Any trained, designated individual or group can create the schedule and as long as the records are in line with your plant's document control guidelines, they can be stored with whomever. Depending on the regulatory body which regulates your company, you need to become familiar with either the FDA or USDA FSIS regulations.
