Ideas regarding bone check procedure for chicken fillet?

Good morning,

 

Would anybody have any ideas regarding bone check procedure for chicken fillet?

Fillet is being cut manually, on the cones. I am looking for the most effective ways of avoiding  bones, as specifications are really strict.

Trainings, I know. But sometimes they just can miss something. Selection - right. Final product audit - ok. What else could you advise?

Dear Iwona,

I'm not sure but you may try to use violet lamp as usually practiced in crab meat processing plant. Some minerals will glow under violet light
