I assume you refer to a HACCP corrective action.

Open the attachment and go to page 34/37

The 3rd and 6th columns from the left specify the hazard and the corrective action respectively for a variety of critical limit failures.

Any process in an operation that puts the food safety at risk has to be eliminated. For Eg. A Catering truck transporting hot food does not have any insulation to prevent the food from getting out of temperature during transportation. Corrective action - 1. Have an insulation material fixed. 2. Have hot food cabinets installed inside the truck to maintain safe food transportation temperature. I always recommend the hot cabinet installed powered by electricity or solar. Advantages of Hot cabinet is that the entire truck need not be insulated and the area outside the hot cabinet can be used to transport cold foods like salads or ice creams. It's a cost saving in the long run.
