Hi Guys,

 

I am after a bit of help ,BRC asks that  "The frequency and methods of cleaning shall be based on risk." Does anybody have a risk assessment template for this,

Hi Parrotgower,

Essentially this should be considered during the development of your HACCP system and be based on your packaging and operation:

2.2.6 The hazard and risk analysis team shall identify control measures necessary to prevent, eliminate or reduce each hazard to acceptable levels. Controls for identified hazards to product quality shall be appropriately managed through the prerequisite programme, as set out in section 5. Where control is through prerequisite programmes these shall be reviewed to ensure they adequately control the risk identified and, where necessary, improvements implemented.

Your study will guide you on risk but will also be based on whether the packaging is meant to be in direct contact with food and the intended use such as high risk food, if so your cleaning risk will need to consider the need to remove/prevent microbial contamination.

Essentially your risk will related to your operation and proximity to open finished packaging so something like this in order of risk:

Final product manufacturing equipment
Packing equipment
Manufacturing area
Finished Product Storage
Vehicles
Raw Material Storage Area
Non product areas

You may also want to consider the known hazards such as yeasts & moulds that may come from the environment such as from ventilation systems.

Hi parrottgower,

 

I'm not in the packaging arena so I'm unaware if mandatory requirements exist for high risk packaging as similar to food ?

 

If not, (or possibly even if as far as frequency is concerned) you might consider the use of this (slightly) inverted approach which has found some acceptability in the food regime for coping with BRC's addiction to risk bases for every conceivable function -
