I would strongly suggest that you have a training schedule.

This way required and/or optional training does not fall through the cracks.

I wold suggest that at minimum you have a training matrix which outlines all the "jobs" within the facility and all the employees. Then tick off which jobs the employees are trained against. For key positions ( like CCPs for example) I would like to have at least 3 people trained on each shift.

Then once a year do a training needs assessment. This involves looking at your matrix, consulting your colleagues and deciding who needs training on what and then draw up a plan from that.

It sounds like a lot of work, and the initial set up is a bit but once it's in place it's easy to keep up with.

I'm entitled to my opinion, even a stopped clock is right twice a day

GMP's, allergen awareness/management, basic HACCP. General occupational safety.

Those are the real basic, basics. Much depends on the type of products that you produce

All new employees should have a comprehensive induction then depending on 'job/item/function' a renewal/refresher on a suitable timescale.

Obviously any changes to a job, all relevant staff are re-trained / updated.

CCP's operatives should assessed continually and have the minimum of annual refresher.

Use a matrix and system of reminders for re-training. Something as simple as some conditional format in an excel sheet turning a date cell RED when re-training is due/overdue.
