VACCP for a red meat slaughter and cutting plant..... what type of things will need to go on this for a supply point of view? we have live cows coming in and packed going out?

Please supply some context.
For BRC7 ?
If so, please note that BRC do not request input for the specific acronym VACCP. (the interpretation of this term by different bodies, eg Campden-UK / GFSI is not exactly the same as previously discussed on this forum).
However there is a large volume of threads/posts here for BRC-related Procedures for VA (vulnerability assessment).
