Proposed points would be :

1. Get all necessary information about food safety system functionality from consultant

2. Check the training provided by consultant for responsible employees in food safety

3. Focus on functionality of the system in cases when consultant is not present in everyday operations

4. Look for week points in everyday operations - dealing with complaints, dealing with nonconformity products, preventive maintenance plan ...

But all of this depends from various points: is this consultant here every week or just in case of audit,is consultant included to define just documents or to provide knowledge, train and improve, is this production small, big, is there big number of employees including big food safety team or maybe it is only family production with 4 employees were this consultant is important team member....

I hope i helped
