Hello, I was wondering if there is anyone here that has made the transition from level 2 to level 3 and what difficulties/obstacles you came across while doing it. Did your training program go through a complete overhaul or just add additional quality references? Thanks for any advise.

I did it six months after taking over at a new company, set up the quality plan just like haccp plan qp's follow the same plan as ccp's and train on it. Separate the identity preserved items, and develop a sensory plan. That's it.

Biggest difference will be developing a quality plan and an identity program.

With that said I would suggest looking at the side by sude level 2 and 3 codes as there are other items that will need to be addressed.

I would first run an SQF level 3 analysis using the available excel checklist from SQFI on your current II program to see those "litte" nuances.
