Hi Luca,

The difficulty is that answering yr query may require a Book.

Just as an example, can try this introductory publication -

Attached File  USFDA Food Service Manual.pdf   555.5KB   108 downloads

Specific details will likely relate to yr Local Regulatory Requirements.

Kind Regards,

In the UK, officially a system "based on HACCP" needs to be used.  Whether it is legislation (yet) in Albania, certainly people are moving that way.  Is it well complied with in catering?  Nope not in the UK despite it being law for years but it should be an aim in my opinion and if they don't have it, you have to wonder how they are controlling the food safety.

Hi Luca,

The IFSQN offer an ISO 22000 Food Safety Management System - Food Service Edition which may be of interest.

Kind regards,

Tony
