Flow diagrams do not indicate where rework or recycling takes place.  The process flow diagrams have not been verified by the food safety team.

that was a finding from the stage 2 audit that was conducted last month.

we do not have rework from our product , must the rework still be entered onto the flow?

Hi Wendy,

 

It appears that the auditor believed you do.

 

Maybe there was some misunderstanding during the audit which you now need to remedy.

 

The process flow "comment" is from memory a routine requirement for a haccp plan development. Also often requiring signatures.

Dear Wendy,

 

If you have no real rework, sometimes there is a little bit recycling. Like some left over dough or misformed product that you put in the mixer again. Mostly this is in the same batch. Or maybe non-conforming product is brought back to the beginning of the line for reprocessing. Not the whole batch, just a few items. These should also be considered. I don't know what product you are handling, so I am just generally speaking.

Make sure that also utilities that are introduced in your process (water, air, packaging materials, intermediate packaging materials) and byproducts and waste are included in your flow diagram.

 

Flow diagram should be checked by HACCP team, by "walking next to the line".  Not just a desk study. Follow your product and see what happens with it. That you have done this exercise should be demonstrable. Meaning it must be documented. For example by signing of the flow chart by HACCP team (please add the date), in HACCP team meetings or in a separate verification report.

 It  seems not economical that you are not recycling/reworking in your company. Just a thought.
