Food defense (Wikipedia)
Food defense is the protection of food products from intentional contamination or adulteration by biological, chemical, physical, or radiological agents for the purpose of causing harm.
It addresses additional concerns including physical, personnel and operational security.
Biovigilance (Wiktionary)
bio- + vigilance biovigilance (uncountable) The detection, assessment, understanding and prevention of biological issues in society.
Bioterrorism (Wikipedia)
Bioterrorism is terrorism involving the intentional release or dissemination of biological agents. These agents are bacteria, viruses, fungi, or toxins, and may be in a naturally occurring or a human-modified form, in much the same way in biological warfare.
There is a requirement to assess both potential threats and vulnerability of your products/facility, from ISO 22002:
Each establishment shall assess the hazard to products posed by potential acts of sabotage, vandalism or terrorism and shall put in place proportional protective measures.
Potentially sensitive areas within the establishment shall be identified, mapped, and subjected to access control.
Where feasible, access should be physically restricted by use of locks, electronic card key or alternative systems.
As well as controls in the facility, product should be protected during storage/distribution and should be tamper evident where possible.
