We have milk,Soy and Peanut in same plant.WE are using same tank for milk and peanut.Peanut is new allegen for us.How I can make sure for cross contamination

oh dear....first call you sanitation chemical supplier....you need there assistance on this. The sanitation process then needs to be validated that the peanut protein residue has been completely removed, including all of the tubing from tank to process and all steps in between

 

Really, start with your chemical vendor, if your using a good reputable company, they will be able to help you with this.  Then you need a testing kit to verify that all traces of peanut have been removed

 

You need to VALIDATE this BEFORE you send product to market

Dear god don't send anything out if you haven't already! If possible, stop production and don't allow it to start again until you've contacted a cleaning supplier and got their advice. Use their recommended product(s) to remove the allergen and use an in-house test kit and/or external laboratory to test for 100% removal of peanut proteins. Otherwise some people and their families could be in for a nasty surprise.

We are using Whey in peanut product too that we use in other product. We are confectionery. We do Allergen and ATP swab. For Soy we have separated area  but not for peanut and milk . we have  color code for all 3 allegen.We are going to start very soon peanut product soon.

WOW. PUT EVERYTHING ON HOLD!

 

Ok, you need to stop everything else and get the owners involved.....planning to run peanuts in a facility with wet tanks where not all products have peanut in them is business suicide if your not ready.

 

You MUST validate the process BEFORE ANYTHING AT ALL SHIPS

 

You MUST take this seriously............please I am actually begging you TO PUT YOUR FOOT DOWN and ensure the company does alot more work before this starts!!!!

We clean tank before we are using peanut flour and peanut extract  and we are stopping all other production while we are running peanut product.

thats a great start, but if there is no peanut in some products, you still need to VERIFY that the potential allergen has been removed from all food contact surfaces by using a reliable test/swab kit

Thank you .Yes. There is no peanut in some product and this is first we are using peanut .My question, before we run peanut in same line where we used to have milk , do we need to swab allergen test because we have whey powder and WPI- instant in peanut product.

No, if whey is present in some form in ALL your skus' that you don't need to swab, you just make sure the label is correct

 

BUT if even 1 product does not have whey, then you need a swab test kit for milk protein as well
