Using almonds with Best Before Date expired

Hello everybody,

I'm just after your thoughts on this. My Ops team have 'found' in the raw materials store a quantity of blanched flaked almonds. The BBD ended in March, and so they want to use them in a baking recipe. My only concerns are one of Alfatoxins..... Or is this not really an issue because of the blanching process?

The only way to be sure is to:

 

Blanch again (or roast)

Sample

Bin (my suggested route)

 

When in doubt, throw it out


Please stop referring to me as Sir/sirs

From a quick look in the Literature, blanching may not remove the issue, eg -

Resample and send out for aflatoxins..

Do a,sensory evaluation process

Depending on storage conditions...and if it's a bulk case..it may hold up...but being flaked ...am not sure

blaching may not resolve aflatoxi issue. Check condition and may want to sample before proceeding blanching.  In addition, do sensory profiling as well.

 

PS. No pest for the batch?

Also document a shelf life extension to have on file.

Hi,

 

I agree, aflatoxine will not change by additional blanching. But do you think that the material is spoiled with Aspergillus during storage? Conditions? Packaging? Plastic with vaccuum?

To prolong the shelf life you can check whether your specification is still met. Check especially for micro and rancidity etc.. Consider the effect on your finished product. Self life of that?
