This webinar will give attendees the tools necessary to address four food safety issues in the processing environment: 1) finding spoilage microorganisms in the environment before they affect product, 2) finding allergens in the environment before they cross contact product, 3) finding pathogens in the environment before they contaminate product, and 4) assessing effectiveness of cleaning, sanitation, and employee hygiene practices.

Amanda Faltynowski : Prici, there are a variety of chemicals that can be used for cleaning. The commonly used are probably PAA and Chlorine based products. With Biofilms, you often need a much higher concentration as biofilms have a protective EPS layer which makes them much higher to penetrate

Ashly Sylvester : Our plant tests zone 2-4 every Tuesday and the hot spots the 1st Tuesday of the month.
Derek Jessup : Ashly, wouldn't you want to test a "hot spot" more frequently since it is an indicator of pathogen growth?
Anna Koo : Is ATP an acceptable allergen verification after cleaning and sanitation?
Alyssa j : @ Ashley.  Do you have an onsite lab doing your testing?
Tristan Binkley : ATP testing wouldn't tell you anything about allergens being present or not
Derek Jessup : ATP is not an indicator of allergen testing. Allergens are proteins which do not contain the living material indicator of ATP to bind to.
Ivan Z : In a recent training with a microbiologist from Ecolab, he focused on biofilms. Accordgin to him, no chemical is extremely effective with biofilms even at higher concentrations. Best method is usual, throrough and careful mechanical cleaning method - scrubbing.

Anna Koo : @Ivan Z - so concentration is the most effective factor, it's the cleaning frequency and quality of the cleaning?
Ashly Sylvester : Our hot spots tend to change, since we focus on cleaning them more often. I have noticed that after 6 to 9 months we change the hot spots, yet drop them to regular schedule.
Jose Chipollini : You can also use REealzyme a enzyme combo to breakdown biofilms

Ivan Z : @Anna Koo, concentration is NOT the most effective factor, plus increases costs and potential chemical contamination. Cleaning frequency/technique is key.
Ashly Sylvester : No we send in all of our Environmental swabs.
Amanda Faltynowski : There are a few products on the market that do have biofilm claims. There is a standardized test to show efficacy against biofilms. Buit yes many chemicals are not effective. Mechanical cleaning definitely can play a large role in removing the biofilm
Ashly Sylvester : We also started sending in a Negative Control along with our swabs for the week.
Derek Jessup : Relatively new to swabbing. Anyone have any experience with pathogen SPECIFIC swabs? If so, how well do they work?
Amanda Faltynowski : all about the 4Ts, Time, Temperature, Titration, Turbulance
Alyssa j : @ Anna.  I do the ATP aller-snap test prior to my ELISA testing to first review the cleaning effectiveness but for validating your process, allergen testing will be necessary.
LAMPROS MICHAS : Technical standard of air-pathogens'-testing(e.g. open plate method, etc.)?
Derek Jessup : @ Anna and @ Alyssa. A company called Romer Labs have allergen specific swabs that work with the hygiena ensure analyzers. I have not used these yet, but sat through a sales rep meeting on them. You know how that goes though. It appears to be an effective swab however.

Bonnie Forman : How do you decide action limits on a dry clean environment and what should a corrective action be when all you use to clean is a broom ( the product it not RTE)
Derek Jessup : @Bonnie. That seems to be the hardest thing about this program is to set the limits. The generalized "standard" limit that has been shown is 10 and 30, but it all depends on the production facility. Many aspects, say flour dust, can throw off your limits as well. That is why the pathogen specific swabs come in handy. Being as it is NOT RTE, what kill step are you using after?

Derek Jessup : @Hlonipani I am assuming you have an open production environment, otherwise you should be able to keep them out? I would say you have a much larger problem to worry about. There should DEFINITELY be an EMP utilized in your facility. Especially if you are RTE.
