Raw Material Specification to Comply with BRC v.5 & ISO 22000

i have any questions to ask food safety expertist as below;

1. what do the topics to concern/must to conduce the procedure for recovery/repair the business after the business has emergency incident (example bioterrorism,fire )?

2. I am not clearly about conducting Raw meterial specification to allow BRC issue 5 and ISO 22000,because one raw meterial can be used in many products in our company, and we export to many countrys in the world (we know the regulation are not same standard ,some contry's regulation are tighted and another contry's regulation are easily, what can i do ?????

No.1 I’m not sure I fully understand yr post but suggest to search for topics here under crisis / emergency / incident procedures.

No.2. I presume you are mainly referring to analytical-type specifications for chemical and microbiological data. Hv seen two approaches to this problem.

(a) the most simple but laborious method which is to create an encyclopedic volume matching every possible final destination and associated requirement (if you know it!). Unfortunately this may act as a challenge to auditors to find a missing item.

(b) to issue a generic type specification with the inclusion of a phrase for the BC (X) items something like –

“The X must comply with any relevant regulatory requirements as appropriate to the receiving location.”

Then you prepare a separate database of destinations vs requirements. Usually satisfies BRC auditors IMEX.

A brief, “sample” (ie non-binding), analysis may also precede (or sometimes replace) the above if desired ( eg Salmonella not detected in 25 g sample) depending on the situation, eg product / destination / sensitivity.

1. You should have a crisis management plans including a disaster plan, product recall and a contingency should you be unable to supply from one site such as moving production to another site or an agreement to sub-contract production to ensure supply.
2. ISO 22000 & BRC
All raw materials, ingredients and product-contact materials shall be described in documents to the extent needed to conduct the hazard analysis, including the following, as appropriate:
a)biological, chemical and physical characteristics
b)composition of formulated ingredients, including additives and processing aids
c)origin
d)method of production
e) packaging and delivery methods
f)storage conditions and shelf life
g)preparation and/or handling before use or processing
h)food safety-related acceptance criteria or specifications of purchased materials and ingredients appropriate to their intended uses
i)allergen content and information on possible allergen cross-contamination

The organization shall identify statutory and regulatory food safety requirements related to the above.
The descriptions shall be kept up-to-date.

I appreciate your suggestions,and i will follow up your suggestion on NO.b

and Tony 's suggestions should be added in our spec. description.
Could you please suggest me about how to plan/design sampling plan to control antibiotic in raw materia (shrimp) ?,because EU or Canada or USA request more analysis result of antibiotic and we don't have the budget for this action ( If you want analyze every antibiotic ,the cost of analysis are expensive ) what i can do to solve this problem ?

Dear ki prayong,

I presume you are referring to farmed products. As far as I’m aware, most current requirements relate to a group of antibiotics responsible for some well documented incidents, eg nitrofurans. IMO the only effective control point is at the beginning, ie the supplier.

Don’t know the details of yr sampling / analytical requirements so difficult to comment but one approach is to combine samples if this is mutually agreeable. Of course, this may increase the risk at a later stage if multiple sourcing / variable quality is involved.
