HACCP - Likely Occurrence/Severity

Hi guys,

Just going through a review for 2010, and have stumbled upon a couple of points which we haven't adressed, but were picked up on over the winter during some minor audits.

For those who are savvy with Food Safety Version 5, I am looking at the first 2 bullet points of clause 2.6.2.
The concept of Likely Occurrence & Severity are relatively straight forward, but I am looking at a way to incorporate this into our current plans with a minimum of fuss.

I have seen some people using a reference grid method to collate a total score?

Any input is welcome and much appreciated.

(on a side note, for those who have the standard to hand, can anyone verify wether clause 2.5.1 will suffice with an operative signature and date?)

very useful and worth spedning money for better understanding.

basically there is 2 decision tree. one for your pre requiste and one for your CCP.

Regarding 2.5.1. You have to check the correctness of your flow diagrams in practice. "walk next to the line". It is actually a requirement from the Codex. You can document this verification by putting a date and the signatures of the HACCP-team on the flow diagrams. You can also document it in meeting minutes of the HACCP-team or in separate documentation.
