It depends on what you intend on utilizing the samples for or want to extract from the samples. Scraping and Core Samples via sterilized equipment are both pretty common methods. A decent guide can be found in the book

Food Hygiene Microbiology and HACCP By S. J. Forsythe, P. R. Hayes

The link is to the google books sample, via google search of "core samples" "haccp frozen meat"

Google shopping results for Food Hygiene Mircobiology and HACCP

Edit: I re-verified links, if that's ok.

Food Hygiene Microbiology and HACCP By S. J. Forsythe, P. R. Hayes

The link to the above book was broken

Can anyone else help with this query?

Dear Tony,

It's a great sampling reference but i suspect maybe a bit overwhelming for practical microbiological purposes.

Interested to note that they applied (Tab.5) a std.dev. for a sample size of 1 despite( X/0) = (usually) undeterminable.

@Hygienic, does yr lab really hv no textbooks on Micro.? ; as Chief Inspector noted, this is a pretty basic procedure as far as the mechanical aspect goes. Or are you wishing only to send a one-off sample out? - in this case it's probably easier to get the analyser to do the sampling for you ?
