In general, you need to meet or exceed the standards set by the authorities having jurisdiction in your area. Local/state health departments, state/federal departments of agriculture (USDA), FDA guidelines, CDC requirements / recommendations.
What you'll need to train on and how often will be determined by what type of operation you are. Get with those organizations first, and they will provide you with free samples of what your policies and procedures should look like. If you exceed them, great! But if you're going way over the statutes and standards, you'll be inhibiting your own productivity and profitability.

Thanks for your response. I know what I need to train. I am looking for a policy/program format to follow, and others procedures for things such as frequency of training, retraining, etc.
