In a Salted dried Codfish plant, the presence of wood is a risk?what evaluation should i do? attendind to the use of the final product? Is there anybody who worked in an area like this one? Thank you

Can you give us a better idea of the precense of wood you are looking at?
Is it wood in pallets, packaging, wood on equipment, tools and utensils, or structural surfaces like floor, walls, ceilings?

I suppose the obvious evaluation is could it end up in the food and/or harbour micro-organisms or chemical contamination(disinfectants)- i know all of our local fisheries now use plastic trays instead on the traditional wood for the raw fish
There may be some relevant info here Compendium of Fish and Fishery Product Processes, Hazards, and Controls there are no immediately obvious(to me at least) references to the use of wood-other than 'if it gets in the food it's a hazard' but there is loads and loads of fishy haccp info/ various countries regs etc- I did start to look-then rapidly lost the will to live!
Maybe it'll be of help to someone with more patience!

I predict it's pallets from raw material. IMEX, comes in 3 grades - acceptable, poor, and unbelievable !
Either way, the first control is usually to isolate the usage area if have to accept as is. This may not be easy.
As per Tsmith, more data needed.
I sure hope it's not the drying step!
