7.2.2 Infrastructure and maintenance PRPs

The organization shall establish and maintain the infrastructure needed to achieve conformity to the food safety needs including as applicable

a) lay-out, design and construction of buildings and facilities, including workspace, employee facilities, and associated utilities,
b) supplies of air, water, energy and other utilities,
c) equipment including its preventative maintenance, sanitary design and accessibility for maintenance and cleaning for each unit, and
d) supporting services including waste and sewage disposal.

Verification of the fulfilment of these requirements shall be planned (see 7.8). The infrastructure shall be modified as necessary, taking into account the results of the hazard analysis (7.4) and the capability of the selected control measures to control the identified food safety hazards (see 7.5 and 7.6). Such modifications shall be recorded.

This requirements indicates that you should identify which infrastructure you need and that you should maintain this infrastructure in good condition.e.g. by preventive maintenance program. Infrastructure is more then only the eqipment, but also includes for example buildings, site area, facilites, water , air, software and supporting services.

You need to verify ifthe infrastructure is maintained. E.g. by inspections, internal audits, verification of records. If these verification shows need for modification you should implement this modification (could be investment) and document it.

It's good idea to put all applicable utilities on the paper e.g.layout drawings, showing the allocation of workspace, employee facilities, equipment, flow of air, water, energy, waste etc.
