Allergen Hazard Analysis
Hi Nixon,I am in need of urgent help. We are currently reviewing our HACCP Plan and 3 Hazards namely Physical, Biological and Chemical. Should I add allergens as a 4th hazard or include them as a chemical hazard.
I am a food safety consultant based in SA and my clients are audited by various companies i.e. FSA (Pick N Pay) etc and I have drawn up 4 x hazard analyses. Physical, Chemical, Microbiological and Allergens. They really like this idea as it gives them a risk analysis of the allergens throughout the process flow.

I would surely add Allergen, and Pest Control Chemical as well (onsite or out sourcing). The Current and new trends of HACCP Analysis should not only cover physical, chemical, biological but also you should include Microbiological. All these elements should be consider when reviewing and revising your program as the current trend in the food manufacturing pyramids.

IMEX "Microbiological" is routinely included within "Biological" from a HACCP POV.
