Allergen Hazard Analysis

I am in need of urgent help. We are currently reviewing our HACCP Plan and 3 Hazards namely Physical, Biological and Chemical. Should I add allergens as a 4th hazard or include them as a chemical hazard.

I would include them as a chemical hazard. I did a quick search of the US FDA website, and it looks like their guidance includes allergens as a sub-heading under the main heading of chemical hazard. I hope this helps.

I am a food safety consultant based in SA and my clients are audited by various companies i.e. FSA (Pick N Pay) etc and I have drawn up 4 x hazard analyses. Physical, Chemical, Microbiological and Allergens. They really like this idea as it gives them a risk analysis of the allergens throughout the process flow.

I hope this helps.


I would say either is suitable as long as you do consider the allergens and they don't get lost with the other chemicals. Some certification bodies would like to see them considered separately IMO as it shows you have considered them and taken them seriously but as long as there is plenty of reference to them, there's no issue IMO.

I THINK IT IS BETTER TO ADD ALLERGENS AS RISK NO. FOUR

I would surely add Allergen, and Pest Control Chemical as well (onsite or out sourcing). The Current and new trends of HACCP Analysis should not only cover physical, chemical, biological but also you should include Microbiological. All these elements should be consider when reviewing and revising your program as the current trend in the food manufacturing pyramids.

IMEX "Microbiological" is routinely included within "Biological" from a HACCP POV.
