Perhaps the auditor is looking for your written procedure, i.e., the document that says what you do to clean the pipes. If you clean only by steam, your procedure will state that, including parameters, e.g., minimum/maximum temperature; minimum/maximum time. You likely need documented validation of the procedure as well as ongoing monitoring and recording of activities/results.

You might want to keep it as simple as possible.
Write in the procedure:

- when the cleaning is needed: product change or batch change,
- how the cleaning is done - 10 min steam.

Some auditors also want the see the material data sheets (foodgrade) of the products you add to the water to make steam (for example the salt).

Good luck!

That is a very good point. Many establishments put additives into the steam - in addition to MSDS and proof of food grade, you will want a technical data sheet or letter of guarantee showing min/max concentration level as well as how to prove it.
