In the UK they are primarily at the plant to cover the bird welfare and transport logs, to ensure they have not been without food/water for to long. They also have a role in the general hygiene/fabric condition and operational process of the plant. Onsite inspector is perhaps a better description. Hope this helps.

In the UE, Veterinarians officially control the products of animal origin for human consumption. Animals are inspected ante- and post mortem in order to declare if animals (flock) fit or not the human consumption (Regulation 854/2004). Moreover veterinarians control the documentation that follows the animals at the slaughterhouse, the general hygiene of the plant (Regulation 853/2004) and of the finished products (Regulation 2073/2005) and have a role in supervising the HACCP plan of the abattoir (Regulation 852/2004) .
